Caramel topping (yields 1 3/4 cups)


  1. Heat oven to 350°F. Spray half steamtable pan with cooking spray.
  2. Mix sugar, flour, baking soda and salt in a large mixing bowl. Combine eggs, vanilla, apples and oil. Add to dry ingredients and beat just until well mixed. Pour batter into prepared pan. Sprinkle with brown sugar and cinnamon maple sprinkle. Bake for 1 hour.
  3. For topping, combine all ingredients except cinnamon maple sprinkle in saucepan. Stir constantly and bring to a boil for 1 minute. Add cinnamon maple sprinkle. Cool.
  4. To serve, cut cake and top with caramel sauce. May also serve with ice cream or whipped topping.
